Quick and Healthy Egg Muffin Bites

Every egg counts! At Sunny Queen Farms, we value all eggs, which naturally come in different shapes and sizes. Instead of wasting the ones that don't fit in the carton, we repurpose them into our delicious free-range egg mix, so no egg goes unused.



Ingredients

  • 1 tablespoon of olive oil
  • 250g Sunny Queen Farms Bizarre Eggs
  • Ready-to-pour egg mix
  • ¼ cup sliced red onion
  • 1/3 cup shredded cheese (you can also use crumbled feta)
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup fresh chives, finely chopped
  • Salt and pepper, for seasoning

Method

  • Preheat the oven to 170°C.
  • Lightly oil the mini muffin pan with olive oil using paper towels.
  • Pour the egg mixture into the molds until they are ¾ full.
  • Evenly divide the onion, cheese, parsley and chives into bowls, season with a little salt and pepper and stir lightly.
  • Bake in the oven at 170°C for 15-20 min.
  • Remove from the pan and garnish with parsley and chives.
